This young man from Split is one of the 30 most influential people in the world. He is less than 30 years old. He made the list because he worked on an interesting food waste awareness project in London last year.
Facts have proved that the “Food Waste Awareness” project is very successful. Mario made a seven-course dinner, which was supposed to be in the trash can, so I wanted to raise awareness of how much groceries are thrown away by the World Hotel.
“I work in the UK, and I want to make a pop-up dinner for a client I met in Thailand. However, I want to stand out, and throughout the process, I always throw away how much food in the restaurant is in my head. So there is no Processed food, these foods will eventually be thrown into the trash can.
So I thought of the idea of making a pop-up dinner with food that the chefs knew would fail. Therefore, one person gave me 10 pounds of zucchini because he accidentally got the extra zucchini, another gave me some thawed duck, ready to prepare for the person who canceled it, and so on. So I collected a lot of groceries, went to the kitchen, and started stacking the plates from my groceries. Mandaric said: “I made a seven-course menu.”
He invited people in the industry to dinner-chefs, restaurant owners, and people connected with food.
“Between the two sequences, I gave lectures on how to reduce restaurant waste, how to reduce household waste, how to recycle food, and how to make compost.
“Only at the end of the dinner did I tell the guests that all the seven dishes they had just finished were made from food discarded by the restaurant. I threw some facts at them, such as throwing away 47,000 tons of food in European restaurants. Processed food every year”, Mindarić said.
He did not charge for the dinner, but collected donations. The smallest donation was £55, and everything he raised went to Centerpoint, a young homeless center in London.
He said: “The project continues, but the banquet cannot be held due to the lockdown.”
He described himself as boring-he did not drink, smoke and went to bed at the age of 11.
Mario Mandarić grew up in Omiš and attended culinary school after graduating from elementary school. He told us honestly that he was attracted by his friends in this school and also by the story of the huge salary of the chef among the chefs.
Mandaric said: “A culinary professor knocked me down for many years and told me that I would never be a chef. Then I dropped out of school.” Mandaric devoted himself to cooking when he dropped out of school.
“I started working in a nearby restaurant for free to learn the basics, and then I applied for a job on a cruise ship from Split to Dubrovnik. This is a good salary from Split. It will take a week for the ship to arrive in Dubrovnik. I was thinking that if I was not satisfied, they would not throw me into the sea. However, I was still satisfied and endured the whole season. I was only 17 years old that year. ,”He says.
